Instructions
  1. Preheat the oven to 350 degrees for sea level baking or 325 degrees for high
  2. Prepare streusel topping. Combine all the ingredients for the streusel in a medium bowl. Using a pastry cutter or your hands, mix all the ingredients until you get a wet sand/crumby texture. Set aside.
  3. Peel and core apple and dice to small even pieces. Set aside.
  4. In a large bowl, whisk all the dry ingredients for the donut batter. In a large measuring cup, whisk soymilk, oil, vinegar, and vanilla. Add the wet ingredients to the dry and mix quickly using a rubber spatula until just combined. Fold in diced apples. Do not over mix.
  5. Using a pastry bag or plastic storage bag with the tip cut, pipe batter into the prepared donut pans until each mold is just 2/3’s full. Be careful not to over fill or you’ll end up with muffin donuts. Top with streusel crumbs.
  6. Bake for 14 to 16 minutes or until toothpick comes out clean. Remove the pan from the oven and let sit 5 minutes before unmolding.
  7. While the donuts are baking, prepare the glaze topping. Add 2-3 Tbsps of unsweetened soymilk to 1 cup of powdered sugar. Whisk until smooth. Let it sit for a bit while the donuts bake and cool. Glaze will thicken. Drizzle over donuts using a spoon. Enjoy!
