Creamy Vegan Mac and Cheese? Yes Please!
I remember the first time I tasted creamy vegan mac and cheese. I was two weeks into the lifestyle and we had just left a wedding where all I could eat was the salad. In between cake cuttings, bouquet tosses and dancing, I was hastily Yelping vegan restaurants nearby.
We ended up in this little hole in the wall spot in Worcester, MA. There, a man from Jamaica put together a plate of vegan comfort food for me to go. One of the side items was mac and cheese. When I tasted it, I thought “what is this sorcery?”. I tried to pry how it was that this “vegan” mac and cheese tasted so much like the real thing. He vaguely hinted at cashews and that was that.

Three years and lots of attempts later, I’ve finally concocted the perfect combination of ingredients and spices to share my vegan mac and cheese recipe with you guys. It’s easy, it’s creamy, it’s delicious and – most importantly – it’s toddler approved.
My favorite aspect of this recipe is the versatility of the cheese sauce. It can be used as a sauce to dip your favorite vegetables in. Add a little more salt and some kick, and you’ve got yourself some queso for nachos and fries. Best part? Having been made from cashews and vegetables, it’s guilt free!
