Thanks for visiting and checking out my very first blog post! Being two thousand miles away from home, I thought this little corner of cyberspace would be a great way to update family and friends back home on our new life in the Rocky Mountains. I am also a mom-to-be so transcribing my life as I navigate through this new adventure would surely be something I’d be glad I did in the future. After all, time has a way of robbing us of memories. Now, let’s talk about pancakes! When I think of pancakes, my mind is overcome with childhood memories of Sunday mornings around the table. The sweet aroma of melted butter on top of perfectly browned pancakes lingering in the air… who can relate? Since I became vegan a year ago, I have been in the hunt for the elusive fluffy vegan pancake. I’ve tried numerous recipes and visited countless veg restaurants. Though what I’ve sampled have been delicious in their own right, they always fell short of what I was looking for. Finally, I’ve concocted the recipe that yield the light, fluffy and decadent pancakes I’ve been in search of. It’s dairy free, egg free, and no animals were harmed to make these delightful beauties. Win-win!
